Cardamom and Apple Breakfast Bread Video Recipe

Every now and then I’m a “sweets” for breakfast kind of person. I put the term sweets in quotations because I don’t like super sweet things (although my current Holiday fueled sugar addiction may be making a mockery of that) but I do enjoy the flavorful sweetness of a delicious slice of breakfast bread.

Which if we’re being honest here, most times breakfast breads are really breakfast cakes (which I have no problem with either) but this particular time I really wanted to highlight my favorite apple variety in this cardamom and apple breakfast bread recipe. Keyword: apple recipe, breakfast bread
Servings: 8
Ingredients
For the Breakfast Bread
  • ½ tsp Salt
  • 1 ½ tsp Baking powder
  • 1 ½ cups Flour
  • ½ cup Butter room temp
  • 1 cup Light brown sugar
  • ¼ cup granulated sugar
  • ¾ tsp cardamom
  • ½ teaspoon Allspice
  • ½ teaspoon nutmeg
  • ¼ cup Pecans chopped
  • 2 eggs room temperature
  • ½ tbsp vanilla bean paste
  • ½ cup buttermilk
  • 2 large apples 1 diced and 1 sliced for garnish
  • Cinnamon sugar topping 2:1 ratio cinnamon to sugar
Instructions
  1. Preheat oven to 350°F.
  2. Spray a loaf pan with baking spray.
  3. In a medium bowl, whisk together baking powder, salt, and flour, then set aside. In a small bowl, mix together cinnamon and sugar for topping.
  4. Use a stand mixer to beat together butter, sugars, and spices. Add in eggs and vanilla and mix until smooth, scraping the sides when necessary.
  5. With the mixer on low, alternate adding in flour mixture and milk and mix until just combined. Fold in the finely chopped apple pieces and pecans.
  6. Pour the batter into the pan, and top with a line of apple slices down the center.
  7. Sprinkle on cinnamon sugar mixture for topping.
  8. Bake for 50-55 minutes until the bread is golden brown and a toothpick inserted in the center comes out clean. Cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
Recipe Notes

Depending on your oven, this may need to cook for an additional 10-15 minutes. You want to make sure that you let it cook completely through.
