5 Ingredient Vegan No Sugar Added Popsicles

Look, this isn’t your run of the mill vegan recipe trying to taste like something else but misses the mark. This is an enhancement of those refined sugar-filled super crunch ice cream bars-which yes while a guilty pleasure of mine- leave you feeling worse off than the sugar high it gives you. These 5 ingredient vegan no sugar added popsicles are a pleasant reminder of those crunch ice cream bars but without the added sugar. Let’s get on to making them!

Chances are right now, while you’re stuck at home, there are 4 bananas slightly browning to become banana bread

BUT STOP RIGHT THERE. 

What if I told you that instead of banana bread you could have these no sugar added popsicles? 

This recipe needs 5 ingredients: bananas, light coconut milk, the darkest chocolate you can find, coconut oil, and Sola Granola

I’ve worked with theSola Company a few times to make sugar free sugar cookies, these delicious smash burgers, and love how their sugar measures cup for cup in baking recipes. The company was founded by chefs who wanted to have a keto-friendly sugar to bake with and since then they’ve expanded their products to more offerings, like this decadent granola

So as one does when they’re craving something sweet but also light? I blended my bananas on hand, added a half cup of light coconut milk and poured them into some popsicle molds. I really wanted to try to make a crunch ice cream bar so I melted some super-dark chocolate with a little bit of coconut oil (to create a chocolate shell) then doused my banana pops in the shell and promptly covered them in tons of Sola Granola

These are the perfect little treats for those craving something a little sweet but not over-processed. Plus because you’re not adding any refined sugar thanks to the Sola Granola, you’ve basically got a healthy dessert on your hands.

Ingredients
For the Banana popsicles
  • 4 large bananas
  • 1/2 cup light coconut milk
For the Chocolate Shell Crunch Coating
  • 4 ounces dark chocolate
  • 1 ounce coconut oil
  • sola granola
Instructions
For the Popsicles
  1. Combine the bananas and the coconut milk in a blender and blend until liquified. If you don't have a blender, you can also use a hand mixer, just make sure that there aren't any chunks of banana left.

  2. Pour into the popsicle mold and let freeze completely, should take about 2 hours.

For the Chocolate Shell
  1. While the popsicles are freezing, heat a saucepan halfway filled with water and bring to a boil. Put a glass bowl over the top to create a double boiler.

  2. Add you chocolate to the glass bowl and melt completely. You can also melt this in the microwave if you have one.

  3. Once the chocolate is melted, add in your coconut oil and mix thoroughly. Remove from heat and set aside to stand at room temperature.

Assembly
  1. Once the popsicles are frozen, remove them from the popsicle mold and dunk into the chocolate mixture. I found that it was easiest to pour the chocolate shell into a drinking glass that was slightly larger than my popsicle so that I could easily cover the popsicle with one dunk.

  2. The process is dunk the popsicle, cover in granola, and set on a wire rack in the freezer to solidify. Repeat process until all popsicles are complete.

  3. You can eat these immediately or store in the freezer for up to a week! Enjoy!
