Hoppin' John Stew

A soup take on this traditional Southern side dish that is packed full of black-eyed peas and collard greens to help you bring wealth and prosperity into the new year.

Ingredients

  • 4 slices thick cut bacon
  • 1 green bell pepper diced
  • 2 ribs celery diced
  • 1 yellow onion diced
  • 4 carrots peeled and diced
  • 1 cup brown Riceland rice
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon dried oregano
  • 1/2 teaspoon cayenne pepper
  • 1 teaspoon salt
  • 1 can black eyed peas rinsed and drained
  • 1 ham hock
  • 16 ounces low sodium chicken stock
  • 2 cans 28 ounce Cento San Marzano Whole Tomatoes
  • 2 cups fresh collard greens chopped

Instructions

  1. In a large Dutch Oven, cook bacon on medium high until cooked thoroughly. Drain on paper towels and reserve 1 TBSP of fat drippings. 

  2. In drippings, saute bell pepper, celery, onion, and carrot until almost tender. Add rice, chicken stock, seasonings, ham hock, and tomatoes to pot. Cover and simmer for 20 minutes. 

  3. Add bacon and collard greens in, and simmer for an additional 10 minutes. 

  4. Let sit overnight, or serve immediately.
