A soup take on this traditional Southern side dish that is packed full of black-eyed peas and collard greens to help you bring wealth and prosperity into the new year.
In a large Dutch Oven, cook bacon on medium high until cooked thoroughly. Drain on paper towels and reserve 1 TBSP of fat drippings.
In drippings, saute bell pepper, celery, onion, and carrot until almost tender. Add rice, chicken stock, seasonings, ham hock, and tomatoes to pot. Cover and simmer for 20 minutes.
Add bacon and collard greens in, and simmer for an additional 10 minutes.
Let sit overnight, or serve immediately.
