Combine the bananas and the coconut milk in a blender and blend until liquified. If you don't have a blender, you can also use a hand mixer, just make sure that there aren't any chunks of banana left.
Pour into the popsicle mold and let freeze completely, should take about 2 hours.
While the popsicles are freezing, heat a saucepan halfway filled with water and bring to a boil. Put a glass bowl over the top to create a double boiler.
Add you chocolate to the glass bowl and melt completely. You can also melt this in the microwave if you have one.
Once the chocolate is melted, add in your coconut oil and mix thoroughly. Remove from heat and set aside to stand at room temperature.
Once the popsicles are frozen, remove them from the popsicle mold and dunk into the chocolate mixture. I found that it was easiest to pour the chocolate shell into a drinking glass that was slightly larger than my popsicle so that I could easily cover the popsicle with one dunk.
The process is dunk the popsicle, cover in granola, and set on a wire rack in the freezer to solidify. Repeat process until all popsicles are complete.
You can eat these immediately or store in the freezer for up to a week! Enjoy!
