Puff Pastry Carrots with Boursin & Asparagus

If you’re looking for a fun appetizer to serve for Easter brunch, look no further. These puff pastry carrots are not carrots at all but actually stuffed with herby, garlicky cheese, and asparagus for a fun twist on a simple appetizer. It is truly a three-ingredient recipe that will delight your family this Easter and the next!

I’ve put together a video here for you to watch how these are made but they are incredibly simple. But if you want step-by-step instructions, I’ve compiled this recipe below. 

How to make Puff Pastry Carrots with Boursin & Asparagus 

Step one: Preheat oven to 410°F 

Step two: roll out a piece of puff pastry. 

Step three: spread room temperature Boursin Garlic & Fine herb cheese edge to edge on the piece of puff pastry. 

Step four: slice the puff pastry into 1″ strips 

Step five: Cut asparagus into 4″ pieces. 

Step six: set asparagus so the tip rests on the outside edge of one of the strips. You need 3-4 pieces per puff. 

Step seven: Starting from the top of the puff pastry, roll down until the end of the puff covers the edge of the asparagus. 

Step eight: pinch the puff pastry at the end to form a carrot tip shape. 

Step night: place on a silpat-covered baking sheet and bake for 10-15 minutes until golden brown. 

Serve and enjoy!
